  1. 2 large chicken breasts
  2. 1 onion
  3. 2 cups arugula
  4. 1 tbsp olive oil
  5. 1 tbsp butter
  6. 4 oz goat cheese
  7. 4 small hamburger bun
  8. 1/2 cups panko bread crumbs
  9. 1/2 cups almond flour
  10. 1/2 tsps salt
  11. 1/2 tsps garlic powder
  12. 1/2 tsps onion powder

Instructions

  1. To cook onions, place a skillet over medium heat and add one tablespoon olive oil.
  2. Add sliced red onions and saute for ~10 minutes or until onions are lightly browned and cooked down.
  3. Meanwhile, in a medium bowl mix panko, almond flour, salt, onion powder and garlic powder.
  4. Dredge chicken breast pieces in panko mixture.
  5. Heat a large skillet over medium heat. After it's hot, add 1 tablespoon olive oil and half tablespoon butter.
  6. Add chicken and cook for ~10 minutes flipping once half way through. You want a golden brown color on each side. If using a smaller skillet, cook chicken in 2 batches.
  7. To assemble sandwich: place a chicken breast on each sandwich, top with some caramelized onions, ½ cup arugula and 1 ounce of crumbled goat cheese.
