  1. 4 chicken legs
  2. 3 tbsps lemon juice
  3. 4 cloves garlic
  4. 2 tsps salt
  5. 2 to 3 thai chilies
  6. 2 cloves garlic
  7. 1 juice of lemon
  8. 4 servings salt and ground pepper
  9. 2 tsps paprika
  10. 1/4 cups olive oil
  11. 4 servings parsley
  12. 4 servings lemon wedges

Instructions

  1. Place chicken in a roasting pan and set aside.
  2. In a small mixing bowl whisk together lemon juice and garlic.
  3. Pour the lemon mixture over the chicken and coat all around.
  4. Season chicken with salt; cover and let sit on the kitchen counter for 30 to 60 minutes.
  5. In the meantime, chop the chillies and garlic; add to a blender or food processor.
  6. NOTE: I advise to wear gloves when working with chilies.
  7. Add in lemon juice, salt, and pepper. Pulse until blended.
  8. Add paprika and oil; process until smooth and completely combined.
  9. Taste for seasonings and add more chilies, or salt and pepper, if you want. You can also add a little bit of sugar to add a bit of sweetness to the sauce.
  10. Preheat oven to 400˚F.
  11. Roast previously prepared chicken for about 32 to 35 minutes, or until cooked through. Baste with its juices half way through cooking. Chicken is done when internal temperature reaches 165˚F. Use an instant read thermometer for accuracy.
  12. In the meantime, preheat a griddle pan to medium-hot.
  13. Remove chicken from oven and brush on prepared Piri Piri Sauce all over. Save some sauce for serving.
  14. Add chicken pieces to hot griddle pan and cook for 2 minutes, or until browned and starting to char.
  15. Flip chicken over and continue to cook for 2 minutes, or until browned on opposite side.
  16. Garnish with parsley and serve with lemon wedges and remaining Piri Piri sauce.
