  1. 2 lb chicken breasts
  2. 1/4 cups olive oil
  3. 1/4 cups white wine
  4. 1 tbsp lemon juice
  5. 2 garlic cloves
  6. 3 tsps ground pepper
  7. 1 tsp sea salt
  8. 1 tsp pepper flakes
  9. 1 tbsp parsley
  10. 2 cups buttermilk
  11. 1 tbsp garlic powder
  12. 1 tbsp seasoning
  13. 1 cup panko bread crumbs
  14. cups parmesan cheese
  15. 1 cup garlic butter sauce
  16. 8 wooden skewers soaked in water

Instructions

  1. Cut the chicken into bite sized pieces and add to large bowl or heavy duty zip top bag.
  2. In a bowl, whisk together the wine, lemon juice, garlic, pepper, salt, red pepper flakes and parsley.
  3. Pour the marinade over the chicken and transfer to the refrigerator for 1 hour or up to 24 hours.
  4. When ready to grill, whisk together the buttermilk, garlic powder and Italian seasoning in a shallow bowl. (a pie plate works well for this.
  5. In a separate shallow bowl, whisk together the bread crumbs and cheese.
  6. Thread chicken onto a skewer until all the chicken is used.
  7. Dredge the chicken skewers in the buttermilk and then the breadcrumbs to coat.
  8. Arrange on a platter or plate and allow to rest for 15 minutes to give the breading time to adhere to the chicken.
  9. Heat your grill or grill pan to medium-high heat and coat with cooking spray to avoid sticking.
  10. Place the chicken on the grill and cook 4 minutes each side or until internal temperature reads 165 degrees.
  11. If your chicken spiedini starts to char too quickly, turn the heat down.
  12. Serve the chicken skewers with the garlic butter sauce and sprinkle with more parmesan cheese, if desired.
