  1. 1 lb chicken breast pieces
  2. 2 tbsps canola oil
  3. 1 bay leaf
  4. 1 inch cinnamon stick
  5. 1 cardamom
  6. 2 cloves
  7. 1 tsp cumin seeds
  8. 1 cup onion
  9. 1 tsp garlic
  10. 1 tsp ginger
  11. 2 cups tomato puree
  12. 1/2 tsps turmeric powder
  13. 1 tsp chili powder
  14. 2 tsps curry powder
  15. 1 tsp garam masala
  16. 2 tsps coriander powder
  17. 1 cup water
  18. 1/4 cups yogurt
  19. 1 serving salt
  20. 1 serving cilantro
  21. 1 serving basmati rice

Instructions

  1. Heat a wok or skillet on a medium flame with oil.
  2. Add in the whole spices; bay leaf, cinnamon stick, cardamom, cloves, and cumin seeds.
  3. After a minute add the onions, ginger, and garlic. Cook until the onions turn golden.
  4. Add the tomato puree and cook for 6-8 minutes until the puree is completely cooked.
  5. Add the spices; turmeric, red chili powder, coriander powder, curry powder, and salt.
  6. Mix it and add a cup of water.
  7. Once the curry starts rolling boil add the chicken pieces. Cover the skillet with a lid and cook for 8-10 minutes.
  8. The curry sauce will start to thicken, once the chicken has cooked through add the yogurt and cook for 3-5 minutes until the oil separates from the skillet.
  9. Before turning off add the garam masala and cilantro.
  10. Serve the chicken curry over the basmati rice and naan.
