  1. 1 cup black eyed peas
  2. 1/2 cups cherry tomatoes
  3. 1 cup chicken
  4. 6 servings coarse salt
  5. 1/2 cups couscous
  6. 3 tbsps fresh cilantro
  7. 1 cup fresh corn kernels
  8. 2 haas avocado
  9. 1 lime
  10. 1 red bell pepper
  11. 1/2 cups red onion
  12. 1 tsp red pepper flakes
  13. 1/2 cups salsa
  14. 1/4 scallions

Instructions

  1. Place couscous in a saucepan with chicken stock. Bring to a boil and then reduce the heat to medium-low and continue to cook until all liquid has evaporated, about 10-12 minutes.
  2. Transfer the cooked couscous to a large bowl and let cool.
  3. Cut each avocado in half lengthwise.
  4. Remove the pit from the avocado and discard.
  5. Remove the avocado from the skin, and dice the avocado into 1/2-inch pieces.
  6. Transfer to the bowl of couscous.Dice the red bell pepper into 1/2-inch pieces, similar to that of the avocado.
  7. Add the red bell pepper to the couscous, along with the black-eye peas, corn, red onion, cherry tomatoes, salsa, scallions and cilantro. Toss everything together to combine. Zest and juice the lime into the salad and add the red pepper flakes.
  8. Sprinkle with salt and pepper, taste and adjust seasoning as needed and serve immediately.
