  1. 1 cup baby cut carrots
  2. 2 tsps brown sugar
  3. 1 cup cucumber
  4. 1/4 cups fresh cilantro
  5. 4 servings lime wedges
  6. 1/2 cups low fat mayonnaise
  7. 1 lb pizza dough
  8. 1 cup radishes
  9. 8 oz skinless boneless chicken breast
  10. 1/4 cups white vinegar
  11. 1 tbsp yellow curry paste

Instructions

  1. Position rack in lower third of oven and place a large pizza stone or large rimless baking sheet on it; preheat oven to 450 F.
  2. Place chicken in a medium saucepan and add water to cover. Bring to a boil. Cover, reduce heat to low and simmer gently until no longer pink in the middle, 10 to 12 minutes.
  3. Transfer to a clean cutting board and shred into bite-size pieces.
  4. Meanwhile, roll out dough on a lightly floured surface to a 14-inch circle.
  5. Transfer to the pizza stone (or baking sheet) and prick the dough all over with a fork to help keep it from puffing up as it bakes.
  6. Bake, flipping once, until lightly browned, 10 to 15 minutes.
  7. Whisk vinegar and brown sugar in a large bowl to dissolve the sugar.
  8. Add cucumber, carrots, radishes, cilantro and the chicken; toss to coat.
  9. Combine mayonnaise and curry paste in a separate bowl and spread on the crust. Using a slotted spoon, top with the chicken mixture.
  10. Garnish the pizza with more cilantro and serve with lime wedges, if desired.
